How to Make Nurungji (Korean Scorched Rice) in a Rice Cooker

Nurungji is Korean scorched rice on purpose. Use a Scorched Rice or Nu Rung Ji menu when the US cooker has one. Accidental carbon is a clean-up job, not the snack.

Nurungji is a snack, not a cleaning accident

Korean kitchens toast the bottom of cooked short-grain rice until it forms a sheet you can peel. Eat it as a cracker. Pour hot water over the stuck bits for sungnyung (숭늉), a toasted-rice tea. Or simmer the sheet into a porridge. The flavor is roasted grain, not smoke.

Black, bitter, welded-on carbon is burnt rice. Scoop the pale top for dinner if it still smells like rice, then clean the pot without steel wool. If the film is flaking, stop cooking and go to when to replace the inner pot.

Persian tahdig, Chinese guoba, and Spanish socarrat are cousins. They are not this button. Sticky / glutinous rice (chapssal) is a different starch job: sticky rice in a rice cooker.

Use the named key when you have one

US Japanese Micoms were sold to prevent a brown floor. Korean Micoms often print the opposite.

Cuckoo America’s CR-0675F page lists White Rice, GABA Rice, Thick Porridge, Thin Porridge, Multigrain, Scorched Rice, Multi-Cook, Baby Food, Auto-Clean, Quick, Keep Warm, Reheat, Preset Timer. The Korean spec sheet this desk uses for cup bands calls scorched rice 누룽지 at 2–4 cups, about 49–63 minutes. That is not White (1–6 cups, ~36–54 minutes). Do not fill to line 6 and press Scorched Rice.

Pressure Cuckoos (CRP review) can make a crust too, but the sealed lid fights drying until the program says otherwise. Use the labeled scorched / nu rung ji cycle. Do not invent a pressure-dump hack on this page.

Grain, water, and the actual sequence

Rice. Short-grain Korean ssal or Japanese-style Calrose / Koshihikari. You need enough amylopectin to knit a sheet. Long-grain jasmine makes shards. Basmati mostly refuses. Brown rice burns in patches unless the cooker has a dedicated scorched-brown program — most US Micoms do not.

Rinse. Loose starch makes a gluey, uneven floor. Same wash as everyday rice: Japanese washing technique.

Water. On a named Scorched Rice cycle, use the scorched / nurungji water line in the pot, not the White line, if your bowl prints one. If the manual only says “use the White line at 2–4 cups,” believe that table. Do not invent a 10% cut from a blog. Cup size is 180 ml.

Sequence on a Cuckoo Micom (CR-0675F / CR-1020F class):

  1. Measure 2–4 cooker-cups. Not a full pot.
  2. Rinse, drain, fill to the scorched or White line the manual names for that cup count.
  3. Menu → Scorched Rice (누룽지). Start.
  4. When it beeps, rest a few minutes, then lift the pale rice. The sheet should be gold-to-amber.
  5. If you want sungnyung, leave the stuck film, add hot water, and use Multi-Cook / a short steam — only if your manual allows water on a finished scorched pot. Otherwise move the sheet to a saucepan.

Do not scrape with metal. Silicone paddle. If it will not lift, you overshot: soak, then clean.

No Scorched Rice key? Do not clone this page

That is okoge: less water, analog keep-warm, or a watched Micom hold. One-button pots like the ARC-753SG already concentrate heat on the floor; they can toast, and they can also weld. Watch the smell. Gold is the stop.

Auto-Clean is the opposite job: steam the lid after dinner so starch does not become next week’s smell. Do not run Auto-Clean expecting nurungji.

Skip-buy / skip-cycle

Skip Scorched Rice if you wanted pale sushi rice. Use White / Sushi. The crust program is a different heat curve.

Skip filling the pot. 2–4 cups on the Cuckoo US manuals. A 6-cup White fill on Scorched Rice is how owners get a wet top and a black ring.

Skip steel wool. A gold sheet is food. A breached coating is a compat-chart order.

Skip buying a CRP only for nurungji. The CR-0675F is the 6-cup Micom that already names Scorched Rice. Pressure is for japgokbap and speed, not for this snack.

What is nurungji?

Nurungji (누룽지) is the toasted rice sheet that forms on the bottom of a Korean pot. Done right it is amber, nutty, and snackable — or simmered into sungnyung tea. Black, bitter carbon is burnt rice, not nurungji.

Is nurungji the same as Japanese okoge?

How much rice do I use on Cuckoo Scorched Rice?

On the CR-0675F US spec sheet, scorched rice (누룽지) is a 2–4 cup band, not a full 6-cup White fill. The CR-1020F manual also caps scorched rice at 2–4 cups. Overfilling is how you get steam-soggy crust or a welded black ring.

Will nurungji ruin a nonstick inner pot?

A short gold crust is within ordinary cooking. Pushing to charcoal, scraping with metal, or running a dry second Cook cycle can breach the film. Lift with a silicone paddle. If the pot is already flaking, that is the inner-pot diagnosis hub, not another scorch cycle.
